Made from organically grown Palomino Fino grapes the Pago Mahina in Cádiz. All hand harvested, spontaneous fermentation with native yeasts in very old oak casks used formerly for Manzanilla. Salty, nutty, yet crisp dry white wine. Drinks like a fino sherry but lighter on the palate. Ages in barrels for about 9 months, then is transferred to steel tanks, bottled unfined, unfiltered, and with no SO2 at bottling.
